A recipe from Fritz & Felix
Today we would like to share with you again a particularly delicious recipe from our friends at Fritz&Felix. We are sure that you have never prepared your gnocchi with Schüttelbrot, right?
The recipe is for 4 people and you need about 40 minutes for preparation. Traditional but different!
For the gnocchi you need the following ingredients:
400g floury potatoes
100g Blue cheese
100ml Vegetable stock
1 Egg yolk
1 tbsp Butter
30g Wheat flour
Salt
80g Schüttelbrot crumbs (finely grated Schüttelbrot)
1 radicchio, cut into strips
For the set is also needed:
Blue cheese cut into cubes
Schüttelbrot broken into small pieces
Now it’s time to prepare the gnocchi from Schüttelbrot:
First of all, peel the potatoes, boil them until soft and then, while they are still hot, press them through a potato ricer. Add the egg yolk and butter to the mashed potatoes and mix well. Do the same with the flour, salt and bread crumbs.
Knead everything into a fine and smooth dough. From the finished dough, form small potato dumplings. Put them into boiling salted water and strain them as soon as they float to the surface.
Meanwhile, sauté the finely chopped radicchio with butter in a pan and add the vegetable stock. Now add the cheese and let it melt slowly.
Toss the potato gnocchi briefly in the sauce and plate for serving, garnishing with cubes of blue cheese and small pieces of shake bread.
