Autumn is pumpkin time – we wrote a lot about this last autumn and that we love pumpkin. Today we have another delicious recipe for you. Namely, an autumnal oven pumpkin.
You will need the following ingredients for four servings:
1 Hokkaido pumpkin
2 cloves garlic
½ tsp salt
1 large pinch of pepper
1 tsp paprika powder
Italian herbs to taste – fresh or dried
4 tbsp olive oil
1 handful cherry tomatoes
30 g pine nuts
The preparation is very quick, so you can start by preheating the oven to 180° Celsius and preparing a baking tray with baking paper.
Wash the pumpkin, cut it in half and remove the seeds with a soup spoon. Then cut the hokaido into slices about 1 to 1.5 cm thick and put them in a large bowl to marinate.
Mince the garlic and, if necessary, the herbs and add all the spices, herbs and olive oil to the pumpkin slices and mix well. Finally, carefully stir in the cherry tomatoes and spread everything on the baking tray. Also sprinkle the pine nuts on top.
Now it goes into the oven for about 30 minutes – this also depends on the thickness of the slices.
We like the oven squash very much with a light yoghurt dip, for example with fresh herbs or also something oriental – with ground cumin.
