Today it’s about apple pie. But not just any apple pie, but the one that grandma used to bake for us. The apple pie that we also stir together with our children today, because the preparation is literally child’s play.
The “sunken apple pie” is simply an insanely delicious apple pie that you just want to lie down in. The thought of it makes our mouths water.
What is special about the “sunken apple pie”? Of course, the wonderfully spicy and aromatic South Tyrolean apples PGI, which harmonised just perfectly with the fluffy dough made from the best ingredients.
Now you can find out what the ingredients are and how to make the world’s best sunken apple pie:
For a springform pan with a diameter of 26 cm, you will need the following ingredients:
125 g soft butter
125 g sugar
pulp of one vanilla pod
grated zest of one untreated organic lemon
3 eggs
200 g wheat or spelt flour
1 tsp baking powder
2-3 tbsp milk
And of course the most important: 6-8 tart South Tyrolean apples, such as Jonagold, Topaz, Elstar or Morgenduft.
As promised, preparing the dough is child’s play:
Cream the softened butter with the sugar. Gradually add the pulp of the vanilla pod, the lemon zest and the eggs. This creates a nice fluffy mixture.
Mix the wheat or spelt flour with the baking powder, sieve finely and fold into the dough by the spoonful together with the milk.
Pour the fluffy mixture into a springform pan that has been greased with butter and smooth it out. You can now set this aside and turn your attention to the apples. Wash, peel, quarter and core them. Now carefully score the outside of the apple pieces with a sharp kitchen knife.
Then spread the apple pieces on the dough with the carved side facing up. But please only place them on top and do not press them in. During baking, the apples sink into the dough by themselves – hence the name “sunken apple pie”.
Bake the cake at 180 degrees (top and bottom heat) for 45 minutes until it has a nice golden colour. After you have taken the cake out of the oven, there are two options:
Either sprinkle a generous dusting of icing sugar over the still-warm cake and enjoy it with a dollop of whipped cream or a delicious scoop of vanilla ice cream.
Or:
Let the cake cool, then sprinkle it generously with icing sugar and enjoy it cold with a dollop of whipped cream or a delicious scoop of vanilla ice cream.
