In keeping with Halloween, today we have a recipe for a spicy pumpkin soup.
You will need the following ingredients for four servings:
1 medium Hokkaido
2 potatoes (floury)
3 tablespoons olive oil
1 onion
1 clove garlic
2 teaspoons paprika powder, hot-rose
500 ml vegetable stock
200 g whipping cream
juice and zest of 1/2 organic lemon
Salt and pepper
2 stalks flat-leaf parsley
1 tsp chilli flakes
The preparation is very quick:
Peel and finely chop the onion and garlic and sauté in 3 tbsp olive oil until translucent. Cut the pumpkin and the peeled potatoes into small cubes, add, dust with paprika powder and also sauté briefly. Now pour in the vegetable stock and cook for about 20 minutes.
Add the cream to the soup and purée until creamy. Finely grate the lemon zest, squeeze out the juice, add both to the soup and season to taste with salt, pepper and chilli flakes. Then garnish with the parsley and serve.
