There are many different types of potato salad, made with mayonnaise or a vinaigrette, or even Mediterranean. Today we share our recipe for a delicious Italian potato salad with pesto and cherry tomatoes.
You need the following ingredients for four people:
1 kilo small, new potatoes (waxy)
1 onion, finely diced
1 clove garlic, finely chopped
200 ml vegetable stock
250 g cherry tomatoes
1 glass of Pesto alla Genovese
3 tbsp. Balsamico Bianco
3 tbsp. olive oil
1 tsp medium hot mustard
salt and pepper
And this is how quickly the Italian potato salad can be prepared
First of all, boil the potatoes and then peel them. Depending on the size, cut them into slices (approx. cm thick) or halve them. The cooking time varies, of course, depending on the size.
Take a pan and heat the olive oil in it, then sauté the diced onion and garlic. Deglaze with the vegetable stock, stir in the mustard and balsamic vinegar and add the potato slices. Turn off the heat and let the potatoes soak up as much of the mixture as possible. Put everything into a large salad bowl and let it cool.
In the meantime, cut the cherry tomatoes in half.
When the potatoes have cooled down, add the pesto alle genovese and the cherry tomatoes to taste and mix everything together carefully. Season everything with salt and pepper and leave the salad to stand for at least another hour.
If you like, you can also add a few toasted pine nuts, shaved Parmesan cheese and basil leaves to garnish.
The Italian potato salad goes great with a barbecue buffet, together with a nice glass of white wine. But Parma ham and ciabatta also go very well with it.
