Hearty and warming lentil soup

Deftige Südtiroler Linsensuppe

This lentil soup is very easy to prepare and tastes absolutely delicious. A hearty and warming winter soup made from green lentils.

You need the following ingredients for 5 servings of lentil soup:

1 medium onion, finely chopped
1 clove of garlic, finely chopped
1 bunch of soup vegetables (celeriac, carrot, leek, parsnip and parsley), finely diced
2 small potatoes
2 tbsp tomato purée
250 g green lentils
3 juniper berries
2 bay leaves
2.5 litres of water
vegetable stock to taste
salt, pepper
3 tablespoons olive oil

The preparation of the lentil soup

To prepare the hearty lentil soup, you need a large pot. Sauté the onions and garlic in olive oil. Then add the finely diced vegetables (except the parsley) and sauté them as well. To create a roasted flavour, add the tomato paste and sweat it as well. Allow a little tomato paste to “hit” the bottom of the pot. Season well with salt and pepper and roast for about 10 minutes. Now add the lentils. Depending on the variety, you may need to soak them overnight. In any case, rinse the lentils carefully with cold water until no more foam forms. Deglaze the lentil and vegetable mixture with the water and add about two to three tablespoons of vegetable stock powder, depending on your taste. Add the juniper berries and bay leaves and simmer the soup over a medium heat with the lid on for about two hours until the lentils are soft.

Finally, season the soup with salt and pepper and sprinkle with parsley. You can also add a few sausages or simply enjoy it without meat.
