The perfect meal for cold autumn days
The traditional South Tyrolean barley soup is easy to prepare and tastes at least as good warmed up as freshly prepared. Delicious with South Tyrolean pancetta and smoked meat.
You need the following ingredients for 8 servings:
Here it is simply worth cooking more, as the soup is also great for freezing.
300 g smoked meat
1 medium piece of pancetta
200 g rolled barley
4 tablespoons olive oil
2 large onions
2 cloves of garlic
2 large potatoes
2 – 3 medium carrots
4 stalks of celery and also some celery greens
Parsley
Salt
Pepper
And now it’s time for the preparation
Soak the rolled barley in cold water overnight. If you prefer them with a bit more bite, just use them unsoaked.
Cut the onions and garlic as well as the vegetables (except the potatoes) into small cubes and lightly fry everything in a large pot with the olive oil. Then add the rolled barley. If you have soaked it, drain the soaking water first.
Now pour in about three litres of water and add the smoked meat and the diced pancetta and let it all simmer gently in the closed pot for about 45 minutes.
Now add the diced potato and simmer for another 15 minutes.
Season the soup with salt and pepper and add the chopped parsley.
Now get dressed and go for a long autumn walk. When you get home, reheat the soup and enjoy this hearty refreshment.
