“Respect for the grape”
This is the top priority of the St. Michael-Eppan Winery and is considered an indispensable prerequisite for the production of long-lasting and expressive wines.
Individual maturation allows the specific terroir and the different varietal characters to be emphasised and highlighted. The wine grows towards its full maturity in stainless steel tanks and wooden barrels. This ageing requires great sensitivity and produces complex wines with a perfect symbiosis of fruit and wood.
Large wooden barrels
At the St. Michael-Eppan winery, traditional ageing in large wooden barrels still plays a decisive role today. Over the years, the historic cellar has been completely renovated and stocked with 50 large oak barrels. The deep barrel cellar still houses the huge wooden barrels, which were decorated with splendidly carved barrel bottoms on historical occasions.
It is impossible to imagine modern cellar technology without the use of stainless steel. From the fermentation tank to the storage barrel. The tanks not only guarantee hygiene and cleanliness, but also vouch for a pure-toned maturation that emphasises the freshness and aromas of the grape varieties.
Gravity cellar and grape acceptance
The gravity cellar, which will be completed in 2020, has a total area of 30,000 m³ and enables the different quality levels to be processed gently and individually in the shortest possible time.
