This strawberry cake is something special. It is not topped with fresh berries as is typical for strawberry cake. The strawberries are mixed into the dough and baked with it. This creates a very special aroma. It has a bit of strawberry jam.
For a springform pan with a diameter of 26 – 28 cm, you will need the following ingredients:
250 g room temperature butter
3 eggs
120 g sugar
1 pinch of salt
250 g flour
1 tsp baking powder
500 g strawberries, halved or quartered depending on size
And now it’s time to prepare the delicious strawberry cake South Tyrolean style:
Take a large mixing bowl and a hand mixer and beat the softened butter with the sugar. When the sugar is no longer audible, gradually add the eggs and mix them in well. Take enough time for this, it must be a foamy mixture.
Now mix the flour with the baking powder and a pinch of salt and gradually stir it into the butter-sugar-egg foam. When the dough is nice and homogeneous, it’s time for the strawberries. Do not mix them, but stir them in carefully with a large spoon.
Now pour the dough into a springform pan lined with baking paper. Preheat the oven to 180° Celsius top and bottom heat and place the cake on the second shelf from the bottom. After 45 minutes you can do the first test with chopsticks. If the cake is already cooked through, take it out and let it cool down. Depending on the oven, it may take a few minutes longer.
Before serving, sprinkle icing sugar over the cake and then all we can do is wish you “an Guatn”!
